It should be in the morning but I hate to give a specific time just because shit happens sometimes at work like a pallet of stones shows up or I have a lot of sharpening to do that need to be done by noon or someone calls and talks a long time. My wild guess is about 10am CST give or take. I’ll give a heads up for the cleaver and the Gyuto here before I put them in stock.

It’s a little stressful when the dumb database can’t keep up with the orders and we over sell the knives but otherwise it’s fun and most of the knives that are sold are to our best customers who are forum members and we know and like. Also, Kosuke is our favorite dealer so it’s like Christmas when his knives arrive.
PS those cleavers that are sitting in our office are amazing looking. I’ll post a picture before we sell them when I get to work.
