Help me find amazing knives in japan pt 1 usuba and nakiri

Post by Gaijin »

1) I'm a home cook

2) Nakiri and usuba

3) not sure

4) not sure. i have a budget for a set not sure how much to allocate per knife. total budget for the set would be 300,000 yen to 400,000 yen

5) i'm ok with reactive or clad over reactive carbon. maybe aogami super or aogami 2

6) open to both lean towards japanese

7) ikkanshi tadatsuna 210mm, 8 inch bob kramer along with a set of kramers including santoku pairing and slicing, ashi hamono wa petty.

8) my knife skills are decent but nothing expert. i do enjoy practicing and always try and improve.

9) i lean towards push pull, and slicing but it depends on what i'm cutting so at times i rock too.

10) not yet. if you have any wetstone recs i'll take those too.

I am traveling to japan and would like to buy some more knives for my set. Any knive reccomendations should be available in japan either from japanese domestic site or shopping districts/stores like kappabashi, the knife store in gion, or osaka.
