Bread knife

So, what’s the best bread knife?
I’m right handed and looking for something that would be a nice fit for a pro environment.

We love our Kohetsu!
They come in 2 sizes now. Wish I'd had the opportunity to get the 270.

I love mine too but iirc, the 270mm is just a 240mm with a longer tang (some sort of prototype). Guessing Mark can confirm.

Yeah, the descriptions says they extended the machi (neck) of the knife, so it's still the same blade length. Tojiro ITK is still my go to for bread and watermelon!

I have a MAC Superior Bread Knife 10.5 Inch and compared to any other bread knife I have used I would say it is... superior. :D

The Tojiro ITK and Mac bread knives are almost identical except the handle shape. Tojiro is much less expensive!

I have both the Tojiro ITK 270mm and the Kohetsu 1k 240mm. Even though I like the additional length on the Tojiro, I still prefer the Kohetsu because I like that pointy tip. With some heartier/crustier breads, having that tip helps get a cut going. And I think that overall, the teeth are a bit sharper than on the Tojiro, which can also be helpful. But in most cases, the knives perform equally well.

Fwiw, I also have a Güde 12" Bread Knife (Alpha Barrel Oak Series), which is a fun showpiece but as a functional tool for a low-volume home baker, pretty much of a waste of space and money.

I have always wanted a Gude, but never pulled the trigger. The Tojiro ITK is a great knife. Easy to rehandle if you want to add some bling. I have used the Kohetsu, but preferred the Tojiro and oddly enough my Shun.

I must confess that the only bread knife in our house is a Cutco which is about 25 years old. However, when I saw the photo of his 240mm Kohetsu which Ronnie posted in the baking thread, I began to think that I need one. A great looking bread knife.
