Biiiiig Shechita in CPM 20CV

Post by taz575 »

Working on this bad boy the past few days off! Blade length is 17.75" edge length, 2.4" wide a little under 1/8" thick at the spine and a full flat grind. Black linen frame micarta handle, still need to do the final handle install and sharpening. This is a knife for kosher butchery of cattle and has a very high polish satin finish as well.

To give a better idea of the size, I took a pic with my Tanaka R2 240mm gyuto. Yes, it's that BIG!

Spine/choil eased/rounded, handle polished and installed and sharpened!

I took it to the belt sander 120 and 220 grit belts on a leather platen at low speeds and then Latte 400, Bester 1200, Rika 5K and then 8 micron, 2 micron CBN and 1/2 micron diamond emulsion on balsa strop. I spent some time and flattened all 3 of the stones before starting and it was still a pain sharpening a blade this long and wide with flex to it!! I just ordered a Shapton Glass 320 from CKTG today; I wanted another low grit stone for making the belt to stone transition a little easier and the Glass series are supposed to be good for PM steels.

I got an order for 2 more of the big ones, 18"x2.5" wide blades in CPM S90V and 3 smaller chicken sized Shechita in CPM S90V with around 5" blades. Going to keep me busy! Hoping to cut out the steel this week and send off for heat treating soon with a bunch of other blades!
