Hi Guys,

Here is a good deal for the week. SLD steel is good, premium steel, and I got 24 of these specifically for this sale.

I've been debating on this knife since Wed when it showed up. I have a hard time being able to judge from the pics of knives especially the choil shots on how the grinds are. To me they all look very similar. From the pics to me it seems to have a pretty good flat spot for the back 1/3 of the blade, and the tip looks like it is about half of the blade height.

Can any one else offer insight from what they see on the pics.

The knife is definitely in the laser class. Very thin at the edge, ground fairly high and what looks like the slightest convexing on the right side. I believe it will be a very good performer ghosting thru soft produce. With such a thin knife and grind I would expect wet product to ride high up the blade. Looks like it has enough curve and high enough tip for a Santoku to be a decent but not great rocker. Has a beautiful handle for a knife at this price point and looks like it would be comfortable too. A lot of this is just speculation just from the pictures.

Looks like a very good value for the sale price.

Yeah—if I were in the states, I have to admit I'd buy this just to give it away to a friend after playing with it. It looks like it would probably be an awesome performer with looks to boot at an insane price, and the size and profile appeals to TONS of home cooks I know. A very cool weekly special!

Thanks Jeff, I was thinking that it looked thin and was ground to just below where the bottom of the handle is. I was trying to compare the choil pic against the Yahiko Ginsan 180 gyuto pic since I have that knife. I'm kind of impressed with myself for being able to see what I did.

Received the Santoku on Friday, of course the first thing I did was slice some newspaper. I went through two 8x11 sheets of it just because I was so impressed with the OOTB edge on the first sheet that I had to use the second sheet to compare it to my other knives that I've sharpened Artifex Bd1N and Yahinko G3, a Kohetsu AS that Mark sharpened that has seen very little use, and my Shibata that has also been gently used sparingly. I would say it was just slighly behind the Kohetsu and Shibata OOTB. It would slice a taunt paper towel with slight snagging. I stropped it on a 3u loaded piece of balsa about 5 times total per side. It would then smoothly slice the taunt paper towel. To me it now slices just as well as if not better than any knife I have.

I used it to slice an onion for supper that night, it sliced well enough that after a couple of slices, I grabbed the Shibata just to make sure that I was making an accurate comparison. The Tsunehisa SLD Santoku does slice very well, it isn't in the same league as the Shibata on onions, but I would have been disappointed in the Shibata if it was. Sunday I used it to slice some apples, tomatoes, green peppers and peeled cucumbers, with the soft produce it almost just falls through them.

I'm impressed with how accurate Jeff's description of this knife is by just looking at the pictures. It does ghost thru soft produce; and they do ride up the knife. I just used it to chuck some sweet potatoes, it does wedge some in them but can be powered through without problem. Doing the potatoes did remind me of my initial impression of the Fit and finish, the scales on the handle meet with the tang very nicely, and the rivets are flush, the angled cuts on the scales are precise corners and fairly comfortable, some user may want to round them a little bit, the blade spline and choil are very square I wiil be polishing them with some sandpaper to round them off.

Especially at the sale price this Santoku has me impressed.

Good post, I always like it when a few similar knives are compared side by side.
