Generally speaking, I don't eat bananas and apparently, neither do the people in my house who continue to request them from the grocery store. But I just can't let anything go to waste, so I used 6 of the 9 rotting bananas on the counter to make a double-batch of banana bread, riffing on a recipe in Joy of Cooking. One was a plain-Jane version, the other had chocolate chips and roasted pecans . . .

Well, bananas are only edible for about a day and a half. Before that, they are too green (too tart, or something), and after that, they are too ripe (make me gag trying to eat them). Kinda why I pretty much stopped buying them, unless I plan on making banana bread (which I do like). Nah, I think it was a set-up. They requested the bananas with zero intention of ever eating them. Knowing that I am completely incapable of throwing anything away, they correctly figured their scheme would lead to banana bread, which it did. Actually pretty timely because my son just queried me on banana bread the other day and baked his first loaf, so I've been thinking about this. I took a pic of the recipe in my edition of Joy Of Cooking and texted it to him. Even though he's a novice, the recipe is very straightforward and he did well with it. I don't know about BCP but in my limited experience, older, black-skinned bananas would not be the best thing for Foster or a Split. In those applications you ideally want ripe, but firm, unblemished bananas. Otoh, in banana bread, the over-ripeness of the bananas helps express the essential oil from the fruit, making the final product more aromatic and imo, better.
