I've found that some knives just look better when lying on a bed of something they've destroyed, and the more of it the better
I'm attaching a few shots of knives-n'-cabbages, and inviting you to add yours.
Commenting on a specific knife's performance with regards to cabbage chopping is welcome, but not necessary.

The Gassan is the thinnest - both overall, at behind the edge - and it does very well, but surprisingly, ss I recall (from the passaround) the Yahiko cut the smoothest, despite the the heavy shoulders.
My sekiso was not as legendary as others', but it's currently on Chris M's operating table... I expect good things

You're a few days late with this Dan, I made cabbage soup Saturday night. My Kurosaki Megumi Hammered R2 is a cabbage slayer. My Kato wedged like a m*****f***** in the cabbage.
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

Masutani VG1 santoku 170.
This time I cut the cabbage into quarters, to accommodate for the knife's short length.
It SLAYED that cabbage! I had to slow down only at the tallest/widest part of the quarter.
Admittedly, it had a refresher on a 6k last night, on top of the usual 2k edge it sports. It is thin, penetratz and separates well with good release, too.

What do you do with the cabbage after cutting it this wide? Does it go into a soup?

Stir fry! If you cut it too narrowly, it's not as pleasant to eat, either texturally or mechanically (harder to pick up with chopsticks). The finish is the from-the-factory sandblast, so I can't take credit for anything. It does look cool, though!

We have stir fry mentioned, what are the rest of you using your cabbage for?

Beautiful knife and photo! I normally don't like fancy-pants handles, but that one fits your blade perfectly.

Raw, mixed with spinach and butter lettuce as the base for a salad. Exciting, huh?

Yeah, Shiba’s knife has destroyed many a cabbage. One of my favs for this purpose!

My number one favorite cabbage knife is an Itto ryu hammered nakiri, particularly when it’s at one micron refinement. I did shred some the other day with a harukaze srs15 gyuto straight off a shapton pro 5k and was very pleased with how easy it was.
