Hi Mark,
I do have a question with the sharpening stones - "With my Shun Chef's knife at 8.25 inches and the Shun Utility 6 inch knife, I went through the process using both stones and got them sharp, but not as sharp as the one purchased.
So, I went back and used the 1000 again and improved both of them a touch, but with the paper cut test - they still tear a bit.
Is it possible that I need a lower numbered stone with those knives due to the electric sharpener I've used for many years?

I suspect that your electric sharpener has removed enough material to widen the angle with no thinning. This produces a thick edge that doesn't cut as well compared with the factory-finished knives you purchased.
If you have some stones, please list them, and I'll try to add recommendations that will fit in with the stones you have. If you don't have a low grit stone, this one will work well with HAP40: https://www.chefknivestogo.com/shro320grces.html
