Looking for new main knife. Would also like a petty.

1) Home Cook

2) Either Gyuto or Santoku. Also looking for a petty knife.

3) Currently have 180mm, but would prefer a little longer.

4) Would like to stay under $150 per knife.

5) Prefer lower maintenance steel.

6) Western handle

7) Main knife is a Masutani VG10 Damascus Gyuto 180mm

8) Fair to good knife skills

9) Use all cutting techniques, but mostly push/pull.

10) Know how to sharpen

I was gifted the Masutani and I do like it, however I was using a friends knife that is longer and I really liked how it felt. The knife I am looking for will become my main knife.

Hey, Kabooma. Welcome to the forum.

In regards to your knife requests, since you are looking to upscale in size and already have a 180, I would pursue another gyuto in the 210-240mm range and leave the santoku for another day. Santokus are almost always 185mm or less, with very few exceptions.

CKTG stock is still fairly depleted from the holidays at the moment, so somewhat limited choices, especially on the gyuto side. All knives below are stainless/semi-stainless, western and are on the laserish side of the spectrum.

Kohetsu HAP40 Western Petty 150mm <--- Extremely wear resistant steel. Might need a little more effort to sharpen. Core steel semi-stainless.

The Tojiro DP line would also work well for a petty. They just won't have the edge retention like what's above.

Thanks for the input! Funnily enough after making this post I came upon the Kanehide and was heavily considering it. I think I will go with that and one of the Tojiro knives. Appreciate the help!
