Thanksgiving Sharpening

Make sure your knives are ready to go for the upcoming holidays. Mine are! I will be on the road (but still expected to do a bunch of cooking) so I am bringing two chef knives both sharpened on a 600 grit diamond plate and polished with a strop loaded with 6 micron diamonds, then finished with a strop loaded with 1 micron diamonds. This is my "shark in a tuxedo" progression that might not win any contests but will be very reliable because the sharpening equipment stays home. :D

Make sure it's a non-busy county road your cooking events at, and you stay to the shoulder or at least in your lane for a portable cooker on wheels. Safety first. 8-)

got the slicer out yesterday and put it to my DMT plates 1200 4k and 8K grit good enough for the cutting im going to be getting into this week

I do a very similar progression on some of my knives. HAP40 and SG2/R-2 like that one.
