Help deciding on a Moritaka knife
Hi I’m really having trouble deciding on a new chefs knife. I have pretty much fallen in love with the style of the Moritaka knives and am considering this one:

The kiritsuke seems like the more interesting knife as I’m already using a up and down push chopping motion for a lot of my cutting ( I use a Chinese cleaver a lot for stir fry prep)
On the other hand I do like the bit of extra length provided by the gyoto and having the option for a rock chopping motion is still something I want.
This feels like a really tough decision without holding the knives so I’m having some trouble.

Personally, I prefer 210mm blade length and use them more often, but you mention you have a Chinese clever as your daily driver, and you might like having a longer blade that can handle a variety of tasks. My vote would be for the 250mm gyuto for you. It's a terrific knife.

For the reasons Mark pointed out, I'd also go for the Moritaka gyuto. Myself, I find the gyuto profile more versatile and more forgiving with tip control.
EDIT: And I like a taller knife.

Hi there "L" and welcome to our forum. I generally agree with the advice above especially as the gyuto has a relatively long "flat" spot (see pic #3), as opposed to the more normal gyuto continuous heel-to-tip curve (often times with a bit of a re-curve at the heel). So it has a pretty good "chopping" abilities as well as better "rocking". HTH

Thanks for posting my question here. I’m a bit worried that the 250 will be thicker and maybe less Laser like? Is that a reasonable worry or should I just bite the bullet and try it haha.

The 250mm Gyuto will perform just as well as the 210mm Kiritsuke. Both are excellent performers but I wouldn't consider either a Laser, but that also comes down to your definition of a laser.
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

Great choice. Moritaka are terrific knives and the 250mm will be very versatile.

I received the knife two days ago. It is really sweet! The knife is so light and the bog oak handle is beautiful.
I’m glad I went with the 250 the size is not off putting at all in hand and it’s great to have the long flat area to work with.
