Hoping some can help me through a 3 way showdown on a budget bunka. Or maybe there is an outsider I haven't considered?
This will be a utility knife. Also used by the wife, therefore stainless or clad is preferred. Her hand is tiny, mine is huge. Slicing tomatoes, blocks of cheese, ham, sandwiches etc... only small bit of veg prep sometimes. She has a manky old santoku she likes. She doesn't seem to fancy long or slender blades. So the idea is to maybe replace that, and a fun new knife for me also. I do most of the cooking. There is no need to over invest in this knife. Good chance it won't be treated very tenderly. It will also be what the kids use when they come over. They know the drill, dont touch dads knives. Use mums. Push pull and chopping,
It will form part of my minimalisation down to a gyuto, nakiri, petty, bunka, bread, boner and meat slicer..... one of each rather than a lunatic big drawer full of knives of every kind.

I would look at the Harukaze or Okeya Bunkas. They are fully stainless and look like they have good grinds!

They Ginsan Okeya you linked should be great. I have a 185mm W#2 from Okeya and it's been a great knife that I use daily. The description indicates that knife has a soft iron cladding, but mine is stainless clad (to my chagrin).
The Misuzu SKS93 bunka is a very cool blade. I gave one as a gift this year after sanding and coating the handle. It'll take a screaming edge. VERY lightweight. I can't speak to the VG10 version.

There's the Yahiko line that would be worth a look into, also. In fact, that Harukaze and the Yahiko appear so similar, they could be from the same parents, just separated at birth.
