As an owner of several Fujiyamas and a stainless Kyuzo, that question really demands a response nuanced enough for its own thread...and (at least for me) my Kyuzo probably needs a good couple more hours of break-in before I could ever compare them properly because of the differences in finishes and how they affect cutting.

If you ever get around to writing up that thread I'd be extremely interested in reading it. I have a B1 Kyuzo (230ish blade length). I like it and I also like my Yoshikazus very much. Still puzzled by why the Fuji I tried several years ago and I didn't click. Real head scratcher for me.
Anyway... if you ever get around to writing it maybe that'd give me some kind of clue....

Ha! Yeah... there've been a few. But you're right... I can usually find at least one thing I really like about just about any knife I try. In the case of the Fuji, given how much people love them and how scarce they are, it would've been a crime for me to keep it.

But you can't have a j-knife collection without Y Tanaka, and the Kyuzo combo catches my eye.
+1 for anyone that wants to do a write up between the two. Would love to read that. I'll also make sure to hide my wallet before reading!

i've been on a bit of a bender lately, buying knives for no other reason than... just to buy them.
some of you may know that I was looking for a stainless laser in the recommendations forum and i ultimately pulled the trigger on the Shibata Kashima.
but before i pulled the trigger on the shibata, i spotted a Nihei SLD 240 on KKF's classifieds and picked it up--purely because i wanted to try a semi-stainless steel knife. it's a good workhorse type that i can always appreciate, and as far as i can tell, more stainless than i expected:
couple of days later the Kashima arrived, which is as every bit whippy and nimble as advertised and reviewed:
and then during the july 4th weekend bernal cutlery released a trade-in 60s? 70s? era "Lion" Sabatier with a custom handle that I couldn't pass on, so I added that to my growing list of Sabatiers in the knife drawer:
vintage vs modern sabs:
and then a masamoto ks got listed last week on KKF, with the white horn ferrule that i've wanted (primarily the reason why i got the Kashima in the first place), and then the seller dropped the price this week to something i could stomach:
side by side with the kashima:
all the sabatier flavors so far:
yeah so i'm gonna lie to myself and say "that's enough knives for a while"
see you guys again soon in here, probably.

That is a fine collection of sabarier's, that Shibata is calling my name, just WOW with the dark handle.

New Knife Day! Hitohira Togashi White 1 240mm Damascus. I wasn’t expecting to come across this knife around Reddit sub forums nor ready to purchase one but when I saw how good of a deal it was, It was a deal that I couldn’t let it slide or pass on it.
