Heat treated this a few weeks ago in my kiln and started to grind it out today. Profile is based on my Richmond AS Laser 240mm gyuto (Makoto Kurosaki). Convexed blade road and shallow hollow on the upper half of the blade, so it's a S grind. Need to tune the grind and profile a touch and when it's done, I will do the final pointing of the blade.

I will try some cutting tomorrow and see if I want to go thinner or not. It's 1095/15N 20, so I may leave it thicker as more of a medium workhorse instead of a laser.

Yu Kurosaki did the Richmond AS Laser and after he was unmasked it was renamed the Kurosaki AS laser.

The choil shot looks great but instinct is saying go just a little thinner behind the edge. Your grinds are really looking great!

No pass around on this one!! Lol. Gotta put it up for sale, debating if I want to make up a handle for it first or let the customer pick the handle?

I do have a 210mm k tip in 1095 I may do as a pass around with the S grind.

That's a great looking knife and the grind looks nice on the choil shot. Adding the S shape will make this an interesting knife.

Did some test cutting last night on tomatoes, cucumbers and peppers. Did pretty well, but I need to thin down the tip a bit more and do some more testing on some harder foods (onions, sweet potato, etc).

For S grinds, I think I am going to do the normal convex grind and then the hollow grind instead of trying to do the hollow first and then convex it.

I went for something mid workhorse like my Tanaka Sekiso as the starting point. That way it will leave enough meat to get a nice hollow grind for food release.

I’m curious how a full damascus blade retains its edge when there is no true core steel?

15N20 is used in wood working tools and bandsaw blades, so it can take and hold an edge. It has around .75 carbon and a good bit of nickel, so the edge holding will probably be decent like most carbon steels and be pretty tough. Damascus steel loses some carbon during the process of making the damascus itself and with a 1095/15N20 mix, I would expect it to perform similar to 1080/1084 steel edge holding wise.


Found a choil shot of a Sekiso online to compare the HHH Gyuto to! A smidge thinner behind the edge and at the tip and I will be pretty close!

Got is a bit thinner and the hollow a bit deeper. But I shattered my glass platen today, so I gotta wait until the epoxy on the new one cures ☹️ before I can do more grinding.

Just needs the handle! Still debating what I am going to use. Thinking Corian Ferrule/end cap and maybe some Curly Acacia for the main handle?

Looks awesome. Great convex grind and the little hallows should make this a real performer. For Damascus like this I always like a more subdued handle that lets the knife steal the show, but that’s just me. Corian and acacia sounds nice.
