Help me spend some money!
1)Pro or home cook? Home Cook, mostly veggies to dump into my stir fry’s…
2)What kind of knife do you want? Probably Bunka.. appreciate any advice rounding out my set up, interested in something new / different.
3) What size knife do you want? Likely 180mm… although tempted to go with a 240 Kiritsuke…
4)How much do you want to spend? Preferably $150 or less… maybe go cheap! Maybe more if it’s worth it… Just need a new toy to learn and play with.
5) Do you prefer all stainless, stainless clad over reactive carbon, or all reactive carbon construction? I’m up for anything (as long as you don’t have to be a master to sharpen it)
6)Do you prefer Western or Japanese handle? - Japanese Handle
7)What are your main knife/knives now?
Kohetsu SLD Gyuto 210mm

8)Are your knife skills excellent, good, fair?
My skills are fair / good.. the wife’s skills are poor to horrible (average 1 emergency room trip per year!)
9)What cutting techniques do you prefer? Are you a rocker, chopper or push/pull cutter?
I’m working on my skills… mostly a pusher…
10)Do you know how to sharpen… I guess I’d say I’m somewhat competent.. I struggle with the harder steels…
I have the gear, would love some personal instruction if anyone is in Chicagoland!

Kuwabaras are some of the best knives I've used. Very hard (but easy to sharpen) white steel.

I would second these recommendations, especially the cleaver. Even the CCK small cleaver (carbon: https://www.chefknivestogo.com/cckcleaver2.html or stainless: https://www.chefknivestogo.com/ccksmstcl.html) would be a fun departure from your current knives. And don't be misled by the name: even though they are called 'small' cleavers, they still are decent sized blades (8" blade length, 3.5" height). This is a very nice knife. I can’t imagine finding something for 150 that would beat this since you are a push cutter. Lots of flat area.
