It seems like I gravitate to $500+ knives...or sharp knives...or knives made of steel...or knives with a handle...or knives that come in a box...no wonder the wife has to keep a close watch on me.

The new dammy gyuto by Okada-san, like all the previous works of his we saw here, is simply beautiful!
One has to wonder, though, what kind of taper does it have following that 4mm tang (and choil)

If this is what an ask from Okada-san get us, then I say keep asking It's a generous hunk of w#2 steel for starters. That makes it a workhorse...until the spine takes a nose dive into the quite pointy tip. That's when it's not a workhorse. It's a nice grind and a decent out-of-the-box sharpness (I hit the strop). Food stick is average to good. The way it's built, I keep thinking it would be perfect for someone with big hands that needs something for exquisite tip work.
