Re: Show us your new knife!
Just arrived this morning purchased from the classified. Thank you knightingknightforever quick shipping and very carefully wrapped. This is my first kono, I was very weary of purchasing it because I didn’t want to take a old school konosuke from someone who had been searching for this one but the knife was calling to me and the regular users here really made it easier to grab thank you.

On to the blade when I first grabbed it out of the box first thing I realized is how light and comfortable it is for the length. After coming out of the excitement of receiving it. I noticed there is a little rust on the blade and am curious if there is a specific way to remove it. i.e. flintz, bar keeper’s friend.

Re: Show us your new knife!
Nice Rembo.
That's not rust, just patina, which can be orange-brownish, blue and more. I'm sure others can weigh in about the best way to remove it if you really want to but I would just leave it. As soon as you get into onions or protein, even if you rinse and clean as you work, a fully reactive knife like that is going to continue to patina. My konos continue to bloom with all those colors as I use them. At first I thought some of the more orange hues were rust too, but no.
Not saying it can't rust if you're not careful but that's not what you're looking at.

D_rap,
Thank you for the reply. I’ve been reading and researching reactive knifes on this forum and I am still in the beginning stages of understanding what I read, and translating the information to real world applications. One thing that I was reading is if you can wipe down the blade with a paper towel and if anything shows up it isn’t patina. I am thinking this could be the case. or am I wrong?

Re: Show us your new knife!
No I think I'm probably a little wrong. It's true you can't just wipe off patina like that.
So I'll change tack a bit, if there's rust it's just a little bit and really minor. When I have that I start with just a little dish soap on the tip of my finger or soft sponge. Or I'll do the same with Bar Keeper's Friend next if that doesn't work. Start really gentle.
Don't want to hijack the thread though it's really a different topic.

Re: Show us your new knife!
Yeah I just assumed it was patina too. A light scrub should take care of it with a thorough dry. I would cut some hot meat ASAP too to put a nice patina layer back over top. The knife has a lot of characterd_rap wrote: ↑Tue Sep 21, 2021 12:24 pm No I think I'm probably a little wrong. It's true you can't just wipe off patina like that.

Nice knife Rembo, any metal polish or Bar Keeper's Friend will remove that rust. I've also used a felt block and a little diamond spray or CBN.Rembo wrote: ↑Tue Sep 21, 2021 11:17 am Just arrived this morning purchased from the classified. Re: Show us your new knife!
Got this Myojin SG2 gyuto 240 today. The profile and grind are very similar to the 2019 Konosuke FM I had.
233 mm* 51 mm
162 gram with Ho wood handle, 134 gram without the handle. I might swap to a D shape burnt chestnut handle later.
2.65 mm spine above the heel, 2.4 mm in the middle (I guess that’s why it feels stiff)

Re: Show us your new knife!
That’s beautiful!! I didn’t realize that he made his own knives(?) or maybe someone else forges them and it’s just branded under his name? I mean, that is basically an Sg2 Fujiyama… sharpened by the same guy probably in the same place. Awesome, man! Now I have another knife I have to get hahahz_zzzzzz wrote: ↑Wed Sep 22, 2021 5:32 pm Got this Myojin SG2 gyuto 240 today. The profile and grind are very similar to the 2019 Konosuke FM I had.

I think it's just stock removal by Myojin. Not sure who HTed it though. Yes it's basically a SG2 Fujiyama.TylerLeach wrote: ↑Wed Sep 22, 2021 11:44 pmThat’s beautiful!! Re: Show us your new knife!
holy smokes. I want it.
Is it as good as it looks? How does it feel on the board? Super delicate edge? Will it glide-n'-guillotine, or is so fine that push-pull is the way to go?

Re: Show us your new knife!
Its a beauty for sure. But its not forged, it's punched, so it's a very different beast to a Fujiyama even if its been sharpened by the same guy. However it does have all his trademark touches including the lovely spine. And SG2......I would love to try one. Well done!

I bought my first expensive knife and it took me 3 weeks to use it!
I bought my first expensive knife and it took me 3 weeks to use it, Yoshimi Hino 235mm Kiritsuke W2.
https://www.chefknivestogo.com/yohibl2ki23.html
It is so light and thin and perfectly shiny I was very worried that I would break it.
Now that I have had it for a few months it is a joy to use, a little long for my tastes' for everyday use, but dam it looks nice!
The knife does not stay in my drawer, it comes out on weekends when we have company and I know that I can keep my eye on it.
So would this be considered a laser?
Anyone else buy their first expensive knife and worry to much about it?

Nice knife! I don't let anyone use my good knives unless I know they are aware of proper usage and care of that kind of knife. And yes, I was super protective (and a bit apprehensive to use) my first decent knife. That gave way to buying many more than I need and to looking for excuses to use them!billk1002 wrote: ↑Fri Oct 01, 2021 12:12 pm I bought my first expensive knife and it took me 3 weeks to use it, Yoshimi Hino 235mm Kiritsuke W2.

Re: Show us your new knife!
Yoshimi Kato's knives aren't generally considered lasers but they are very thin behind the edge and have laser like performance.
