So I bought my 74 year old mother a pretty nice Japanese knife (can't remember the brand off CKTG) I think it's semi stainless steel core around 60 plus rockwell. This was probably about 3 or 4 years ago. Anyway she never really used it because she thought it was to sharp. So she was chopping bamboo and she figured since it's a sharp knife it would cut through it. So she just started hacking away at it until she noticed the knife was almost completely destroyed. So she finally got to visit me because of covid, and brought me the knife and apologized. Well I decided to try and fix it by hand. It took a couple of days grinding and trying to reprofile on an atom 140 plate. Followed by 400 ,1500,3000, and natural stone finished. It's still not perfect as it was new but its totally usable. I almost gave up a couple of times 😃

Thats a lot of stone work! Did you have to do a lot of thinning behind the edge or did you leave it thicker for more durability?

Wow. Impressive repair. As someone who goes way to far down rabbit holes such as bbq and kitchen knives, I have learned the hard way that most people don’t want to follow me down that rabbit hole.

Very nice! I don't think I would have the fortitude to do a repair that extensive on stones. As soon as I saw the words "chopping bamboo" together in that sentence I cringed!.... :shock:

It looks like a Takamura chromax santoku, which I heard it's tough enough in pro kitchen. Indeed very impressive work. Great job!

Wow that was a lot to do. I doubt she does something like that again. My family tried to help me one Christmas to let me sleep in, and did a number on our Chromax 210 spatchcocking a turkey. Three chips but nothing like those. Evidently bamboo IS very tough.

Congratulations & very well done. Before I saw the "after" pics, I was thinking that you'd lose a lot of blade height, but that's worked out really well. Great save :D :D :D
