I was just checking out the fabric shears and noticed that the status lines say white #1 polished but the description says that the white steel has a black finish, blue steel is polished. Are the shears blue steel?

This is a somewhat unique knife and according to Tabata, there are many wild deer in Tanagashima and the knife is very popular with local hunters who use these for skinning, gutting and boning the deer.

Thank you! Some years back Japan Woodworker sold a Japanese hunting knife with an unusual but elemental shape, like an ulu but with an offset handle. Blue steel, Damascus cladding, maker “Tanaka”. No idea if it is either of the makers Mark carries. I almost snagged one at $160.

If you haven't picked up the butcher knife yet, do so. That's definitely one of the unique ones to grab (a quarter inch width for the top of the spine tapering to an eighth...hefty). I have the 190 santoku as well and they are well done blades...good forging, good grind (a little different maybe?), good polish, good sharpness, good cutting performance. The price is right, too.

I thought their KU blades were white #1 and the polished blades were blue #2? Ah, I must have glossed over that. Either way works for me. I grabbed a 210 and I'm very much looking forward to seeing their work on the polished line.

I don't really know why he chose the stainless kasumi finish with the white #1 steel but I'm guessing it may be based on the availability of steel he has on hand. The catalog shows blue #2 with stainless kasumi.

The polished blades are VERY nice. The finish and sharpening is top notch. I'm sure there are raised eyebrows at the white #1 thing, but it's honestly a non-issue. I will point right back to the sharpening job there. The 210 feels good in the hand and performs as well as some knives that cost a lot more (really good with food stick). I would say "watch this space" for more to come.

I hope whoever picks up the Kiri cleaver drops a comment here. If it's fit and finished like the gyuto, it might just need to be a piece of art The white #1 use is probably more appropriate for a cleaver as well (personally, I don't have an issue hacking away with a blue #2 cleaver).

We love the new blood all the time Mark, as often as you can please. The website gets drained so quickly. If you want an Anryu these days you have 10 minutes from the time you post them and then they're gone until the next batch. With shipping being what it is now who knows when things will get here. I'm itching to pull the trigger on that kiri cleaver!
A little off topic but I'll say it any way. What we've all found here Mark thanks to Susan and yourself is a community to be a part of. Many of us don't buy anywhere else, preferring to wait for new product than chase it elsewhere online. When someone posts something for sale, people are on the lookout to make sure nobody here gets taken for a ride. We all feel a part of it and responsible for it's protection. Thank you Susan and Mark, we love CKTG and we all agree you guys are the best! I can't wait for the Daovua group to send the new 52100 steel version of their knives, they have such great shapes to their blades plus the handles are smoking! This is The best forum, we belong to it and participate in it, protect it, learn from it! All through your good works!
