Not Jeff here (nor nearly as knowledgeable) but I also own Fujins in AS and VG10. I give the slight edge (sorry about that ) to the VG10. I prefer the look of the AS and the ability to put a more refined edge on it. That said, the VG10 is also a looker and takes a very nice edge. But what puts it over the top is the fact that it's non-reactive. Having a great a knife with that attribute really sets it apart for me. I recently bought one as a housewarming gift for some friends and seeing their oohs & aahs reactions when they opened the box was really sweet. In either steel, the Fujin has a presence.

The performance is so very close but I'd give a slight edge to the VG10. The grinds are very similar but the VG10 just feels a little thinner and more laserish. I actually use the AS more because of it's size, it fits my needs better overall.
They are both such great knives I can't really say I like one better than other. Like Ronnie said, the all stainless has it's advantages at times but I also love that nice crisp edge and retention you get from the AS. Just a great line whichever direction one goes.
