Not yet. Mr Tanaka takes a while to produce. He’s the lone forger in his shop. His young son was just starting to work full time when I visited a few years ago but he had him doing blade grinding and sharpening.

I love the shape of the knife, especially the height, but if I’m being completely honest, I’m not a fan of how rustic/simplistic the knife looks and would look with a walnut handle. It reminds a lot of the knives made by Fujimoto. Not sure if it’s the same craftsmen or what not. I’d prefer that knife with a kurouchi stainless clad finish or a kurouchi lacquer finish with a burnt chestnut handle. The burnt chestnut handle would make it standout and I love the in hand feel of burnt chestnut. It has better grip and texture. How much more of an upgrade cost would that be?

Yes Tanaka is a very common name. I think top 5. Suzuki is a very popular surname too.

Update. The first order for these are being shipped out today. We should have them next week.
I believe the handle is going to have their regular walnut octagonal with black pakkawood ferrule on them so these pictures of the prototype will need to be updated. https://www.chefknivestogo.com/kobl2tagy24.html

Most of the ones I touch up are pretty sharp. If you write “Thanks Mark for the free stropping” I’ll test the edge, strop it, deburr it and retest to make sure it’s good to go.

I was excited until I saw the weight! 8.4 oz. I hardly have anything above 7.5 ounces.
