They are hardly ever in stock. For us mere mortals, where would we find one?

Awesome! You have a couple things on my list there… that Moritaka Ishime Kamagata and the Kurosaki vg10. I have the Kurosaki Fujin in AS and in Sg2. But someday I’d like to get the trio! The Vg10 one is just so striking. So like I said these are just the knives I brought with me on business (I am a Chef) but when I get back to Nashville I will take a big family photo. Since posting this I also just picked up a Kono HD2… sooooo excited about that one.

Thanks Tyler! I actually have that knife for sale in the classifieds if you’re interested.. and I love the Kamagata. It’s unique and efficient

this one made of African walnut, feels very kind to the edges as well.

my pervious was Boos edge grain maple, can tell it was harder wood.
