I am a wrong person to answer this objectively since I am biased towards Anryus
Wakui is a great one and I like it a lot, just that I like Anryus better. Anryu is a tad taller, the curve in the neck feels super good for pinch grip.

Very much agree about the Saji… I was seconds from pulling the trigger on that knife with a western handle just a few days ago… what do you think of it? Thickness? Performance? Obviously it’s a looker…

I love that knife. I use a quite a bit on a day to day basis. It's not super thin. It's a workhorse, the blade has a bit of heft and stiffness. The grind is good, gentle convex (I felt one side is more than the other). Cuts really nice. Nice f&f. Overall good workhorse kind. But the main appeal is in the aesthetics. Plus JoeBone did an amazing job with the handle.

Surprisingly, the Takeda looks like a beast, but is really svelte. The top one is indeed a Matsubara nakiri.

Morning after cooking at my brother's the other night, a trio of old reliables:
Poor Taka suffered a injury while serving a decidedly inexperienced user in the past few months. Expected recovery in 4-5 mos or when I get sufficiently annoyed to expedite, whichever comes first.

Ah, it may appear large here next to a 150 and a 180, but that would be the 220 Shibata Kashima. Such a fantastic cutter that also works well as a slicer, and its R2 steel and stainless cladding perfect for family gatherings where I can't always keep an eye on the knife.
