I just received my first order of Voestalpine 26C3 carbon steel, the composition is between Hitachi White steel and Blue Steel.....the nickname is "Spicy White". Below are two gyutos that I heat treated today....out of the quench, they are 67 HRC....I am aiming for 64 HRC post temper. The top blade was differentially hardened, this steel should take a hamon. I made a couple of test coupons and broke them after hardening, the grain structure was very fine. The initial supply of the steel was only .078", so these blades will be quite thin...the supply house has thicker steel on order. I am quite excited to see how this performs, expectations are high.

This is a 210mm Petty that was designed based on input from Carl Kristian Frederiksen, chef at Dill restaurant in Reykjavik. The blade is differentially hardened W2 @62 HRC. The handle is sugi cedar with buffalo horn and nickel-silver accents and the saya is Hawaiian koa.

This is a knife a made a couple of years ago, it recently sold on the secondary market. When I learned of the sale, I reached out to the seller and told him that he could offer that I would touch up the grind and recondition the handle/saya to new condition for the new buyer at no cost...just one possible benefit of dealing with a local maker. Here is version 2.0.

This is a 210mm Petty made of differentially hardened W2 carbon steel. The handle is spalted Jatoba and the saya is Indian Ebony.

Here is a neat project....a matched gyuto and petty with desert ironwood burl handles and an desert ironwood saya. The photo shows the layout of the 2 sayas from the same piece of wood. There is little room for error where the knives are close together. I will trim the majority of the wood on the band saw, but will use a thin kerf coping saw to separate the sayas.

Desert Ironwood is in season....I have 3 different projects using desert ironwood, it is such a nice wood to work with!

Here are two Yasha Yukawa's blades that I have finally finished installing handles on. I have had these in the shop for a long time and now they are ready to meet their owner. They are both made of tamahagane steel, the small knife is a 150mm petty and was made prior to Yukawa becoming a licensed swordmaker. The suji is 310mm and was made after he was licensed. The handles are mammoth ivory with nickel-silver ferrules and endcaps. The sayas are quilted maple with knurled nickel-silver pins.

The ivory is not a hard material to work with, but each of these handles were $300 just for the ivory...so yes, the stakes were high and I made a wood test handle and worked slowly and only when I felt like I was on top of my game.
Thanks Jeff....yes, I turn them on my lathe...it's a 7x14 and the pins are 98% of the work that gets done on it.
