SOLD: 2015 Konosuke Fujiyama W#2 270mm gyuto-kiritsuke
Up for sale is a beautiful and hefty 270mm Konosuke gyuto-kiritsuke. As far as I know, it still has original edge set by Morihiro. The edge looks pretty pristine.
$650 shipped, including PP fees and original box/saya.

Re: 2015 Kono Fuji FM W#2 270mm gyuto w/ k-tip
Wait, you said it was never sharpened but in the info post, you said it was sharpened? Also, you noted that it has stainless cladding, but with a patina like that, there’s no way it’s stainless clad, haha.

I don’t know, the guy who sold it to me said never sharpened. And I just acquired it not that long ago, and I definitely haven’t. But yeah I can see what you’re saying. And there’s limited info on the cladding for this model online. I’ll take the specs sheet down for now. I only know about it the information that was given to me, and I researched some additional info to pass down for the sale

Re: 2015 Kono Fuji FM W#2 270mm gyuto w/ k-tip
I'm not going in for any scolding or finger pointing. This is an intriguing offering. KnightKnight first introduced this knife with some questions on a thread that begins on September 4th. It has some good info. I'll add a few details in addition to the fact that the cladding is, yes, reactive not stainless.
For one thing, assuming it's what it seems to be, and I do not have a trained eye, it is, by all indications, a Konosuke Fujiyama, but not an FM, because it predates the FMs, and the sharpener is Morihiro. Which is very cool.
KnightKnight, it would be great to see detailed specs: height at the heel, heel to tip length, weight, spine thickness in a couple spots, heel, halfway, near the tip.
Some sharp closeups of the right side of the knife, spine maybe and the edge would be great. Also details of the box label. I'd like to see a little more more clearly, but I also won't be surprised to see someone snap this up. Seems like a find.
Also just a note: the profile looks to be more kiritsuke than gyuto.
GLWS. Looks like a special knife.

Thanks, David. I don’t profess to be a Konosuke expert. I’m just trying to find the perfect knife for me, and this one just wasn’t “it," so I'm putting it back out into the world… Anyway, the information you requested is:d_rap wrote: ↑Tue Sep 14, 2021 1:14 am I'm not going in for any scolding or finger pointing. Handle length: 6”
Total length: 16 13/16”

Taper is 3.16mm > 2.7 > 0.5mm
And I'll work on those pictures.

I cleaned this up a little. Let's try to keep this civil gentlemen.

Not a K-tip guy but that's a gorgeous old school Kono at a very reasonable price, GLWS

I'd be all over this if it wasn't white 2. Have one already. This is a brilliant knife with some serious provenance and desirability. Very well priced too. GLWS!

Re: WTS: 2015 Konosuke Fujiyama W#2 270mm gyuto-kiritsuke
Honestly, aside from it's a bunch of money, the only downsides, which would only be for some people, and I'm assuming the owner would want to use the knife, would be they don't want something that long, and/or they want something maybe a little higher at the heel for more knuckle clearance.
But assuming you like the size and the way it feels ergonomically--and we already know how drop-dead amazing the spine and choil are-- well then yeah it's a keeper. And unless it's actually broken it's always going to be worth more than you paid for it.

Re: 2015 Kono Fuji FM W#2 270mm gyuto w/ k-tip
Had a good giggle on this one thanks!
FM is a line of konosuke not a brand or person.
This is not an FM.
Old stock Morihiro work, and a note to the new owner : these did not come with an edge bevel back then, they were left at true zero for the user to set their own bevel . If it truly hasn’t been sharpened , you’ll need to set one … don’t go too deep! Make it a micro bevel !
