Re: Anyone using a Loupe?
Tried the MicroBright and I'm not impressed at all. The magnification and focus is fine but it's very difficult to use. The inverted image is a pain, you move up the image moves down, you move left the image moves right. Any rocking/movement of the magnifier or knife and you lose focus and it's not...

Re: Anyone using a Loupe?
I have the microbrite and there are two things that I don't like about it. Firstly, the working range is very small. This means that it is difficult to get it focused unless the object you're looking at is held steady. Secondly, the image is flipped which makes so you really have to think about how ...

Re: Bone cleaver rehab
Thanks for the complements. Excuse my ignorance but what did you soak that in to get that finish? Phosphoric acid and nickel nitrate at a boil. It is a parkerizing process. I've offered to refinish KU for people but nobody has taken me up on it. It's way more durable than what comes on most knives ...

Re: Knife shaming, I confess...
A friend of mine gave me a 6 inch CutCo chef knife to sharpen. It was so dull when they gave it to me that you couldn't cut yourself on it if you tried. I wanted to do a nice job on it for them, so I went through a progression all the way up to 10,000 and put a beautiful mirrored edge on it. It wasn...

Re: Hapstone V6
I think Hapstone offers a clamp that you can retrofit onto their system. (https://www.gritomatic.com/products/rotating-clamp-system-for-hapstone) This would allow you to have a clamped system and still use all of your old stones. I am a Wicked Edge user. It is an expensive system but I do love it. I...

Re: Do you guys think the claims are legit?
I don't see any reason why a custom fitted knife handle would be a bad thing, but the idea that their next steel is the best knife steel ever does give my BS meter a nice spike. Also, they make no mention of blade profile and the example knives they show are aesthetically hideous. It's an interestin...

Re: Silly kitchen utensils
The onion holder thing seems like a total waste of time. If you really want even slices of something and you aren't going to do it the traditional way with a knife, just get a mandolin. Also, the people in the Chef's Thumb video look like they might need protection for more than just their thumbs wi...

Re: cant sharpen stainless steel?
Stainless steel knives are not a problem to sharpen. If you get a budget knife with very cheap / poorly heat treated steel, then you will have a difficult time sharpening it. As it happens, most of these knives are made of a mystery stainless steel. I suspect that this correlation has lead people to...

Re: Edge Pro vs Freehand
I agree with snipes; EP will take much less time to learn and to get truly sharp edges, but a set of free-hand sharpening stones will be less expensive.

Re: few questions from a newbie...
Do you ever find any great knives at garage sales/swap meets? Not necessarily great but very decent. I can usually find a variety of Henkel & Wusthoff in a variety of sizes. Sometimes they come with no major scratches or damage and after I clean them up and put a nice edge I have a great knife ...

Re: Hapstone vs EP
I think this comes down to a question of creature comforts. The Hapstone offers a lot of the upgrades / mods that people wish Edge Pro would do. Nothing is free, so you are going to pay more for those upgrades. The only person who can say definitively if the extra price is worth it or not is you. I ...

Re: Should I switch out of my Lansky?
The Edge Pro would allow you to get a significantly more refined edge if you choose to invest in good stones and some lapping films or strops. I think the main advantage of the EP over the Lansky is the flexibility it offers. The EP will give you more options with regard to sharpening angle, you can...
