I use the Yuki Honesuki for those tasks and love it.

Re: First Japanese Knife.

While we are talking steel, we should also put it into context. It's only one variable. It is also important to look at the weight, profile, and grind of the knife. Do you want thin, laser-style or something with some heft? What are you used to? Do you have old German knives or something similar for...

Re: recommend a 270 mm laser gyuto?

The Ashi comes in a higher hardness version. I think the HD2 is holds a nice, toothy edge very well, and I think it's just a bit thinner than the Ashi. I would think about a suji. It's not as versatile as a gyuto, for sure, but the things it does well, it does better. I love my Ashi suji in white no...

Re: Two stones to rule them all. Help decide?

I started with a combination stone and think it's a great way to get going. I use two Shapton glass stones in a pro case for travel. But for everyday, I'm glad I have more options than that.

That's a special knife. Were it me, I'd send it off to rehandle. But it all depends on how much you like it.

I wonder if people typically use mid-grit stones on the Ura? I would worry about over sharpening the Ura.

Re: Kurosaki Arrivals

My new 270 AS is on the thin and nimble side -- can't compare it to earlier versions, though. The Kurouchi seems pretty durable, but mine is still new.

Re: Kurosaki Arrivals

Believe it was around 5 years ago that I bought a Kurosaki Kurouchi AS for $250. Today it sells for..... $250, nice! :ugeek: I get the feeling that knife prices have been rising (noticeably) in the last year, which make it an even better deal. Especially in the context of demand for his work and hi...

Re: Best way to sharpen a single bevel?

I wonder if the Tanaka has some kind of micro-bevel on the Ura side that is minimizing steering? Shapton Glass is great for Ura sharpening -- only use high grit stones for that. In terms of a soft natural, look for things rated 2 or 2.5. I use a Hakka Tomae, but there are other options. I think Cera...

Wait a second, this is not a trial, and it is most definitely not a gene altering therapy. These statements are simply not true.

In and done within 10 minutes or so at both then a 15 minute wait for observation and back on the street. I want to echo this. I can't say enough ...

Re: Best way to sharpen a single bevel?

I have seen these knives listed before, and they are intriguing. Be aware, they will take a lot of practice -- single bevel knives steer, a lot. It should be fine for very short product, but even a shallot or apple will be a challenge. On stones, that Ozuko is too hard for what I'm talking about. Ev...

Re: Best way to sharpen a single bevel?

I am no expert here, but I'll go first. What kind of knife is it, and what are you using it for? That would help answer the question of to micro-bevel or not. A Deba you're using to go through fish bones would benefit from one, especially at the heal; a yanagiba you're only going to use to portion a...

I'm sorry, but neither of the links you shared on from credible sites. Media Bias/Fact Check lists both as low or very low in credibility. Re: New knife, never purchased one

Greetings! If you are used to a 10" Western, I would opt for a 240 Gyuto. This one is on the hefty side for a Japanese knife, but it has a great reputation around here (I don't have one, but I have similar knives and love them): https://www.chefknivestogo.com/gibl2gy24.html I wouldn't use it on...

Had Pfizer no. 2 on Friday. After dose one, I had a sore arm and general aches for about a day. After dose two, sore arm, low-grade fever, general malaise for a day or two. I'm glad to have have had good uptake and am eagerly awaiting the protection that comes with it. I'm increasingly alarmed by t...

Yes.

No room for a mag block. I have a Japanese stand by my work area for knives I'm working with. I made my own in-drawer storage out of a bamboo box and some cork for things in rotation. Then there are boxes. Travel knives stay in a roll.
