The Nubatama black 180 is a darn good stone. Interchangeable with the 220 really since they are so close in grit. If you didn't know you couldn't tell the difference using the stone. Or I can't anyway.

Keep the angle up on those Chicagos. Over 20 degrees. Anything lower and the edge will do an insta-roll first time it hits anything.

Any which way you go its more about learning how not to sharpen so you can learn to sharpen. Broida's videos are good if you can keep up with him. Carter's have good points if you can put up with the guy. Peter Nowlan has some very informative articles and videos as does Ken Schwartz. There isn't an...

If its the SG2 steel knife at the moment I go with whatever 400ish stone I happen to have handy, Chosera 800, Shapton Pro 1500 ( my only Shapton ), Chosera 3000 and finish on the Nubatama 5K. Since I lack Nubatama stones in the 400ish - 3000 range this progression works quite well.

I think this thread is over thinking things a bit. I think I would be concerned if the stone didn't pick up swarf. Any stone is going to load up depending on the technique and pressure used. That 320, as with many of the higher end Nubatama stones, is a transitional stone to the next grit. Likely a ...
