I find that taking my yanagi to 8k works really nice. The reason I asked about the deba is that it’s going to be basically my fishing knife to break down small fish like snapper and yellow tail. I didn’t think taking it to 8k made sense but I wanted to hear what you guys and gals think.

To what grit should I take a new deba

I recently got a deba, (just because) and to process small fish like snapper. I have limited experience with single bevel knives but I have sharpened my yanagi several times successfully up to 8k and I am happy with the edge. To what grit level should I take the deba sharpening to? I have stones up ...
