I've got another question. Where does Carter knives fall in line with the knives you all have talked about? The couple I've handled were a bit heavier than the knives in this string but were pretty thin behind the edge and sharp. I can only go by what I've been told about retention, I've heard 64+-....

Thank you all for chiming in! So what I noticed about today's knives is a thing but I'm also hearing that the HD is still in the game! Still a special knife!

Update, the Kyocera battery operated sharpener was a flop. Not near enough power to do any real work. Also, the diamond wheel was spring loaded with not enough tension. So I returned it and picked up a small DMT double sided diamond plate 600 and 1200 grit for ten more bucks. This was the way to go....

Ya, I get that. I contacted Kyocera and they talked me into their battery operated sharpener. For forty bucks I figured I'd give it a try. But I've got diamond spray on strops so it"s no cost to me to give that a try. Maybe some combination of these will do the job?! Thanks Taz

Thank you guys for that information! I've never bought a knife from anywhere other here at CKTG. So I don't need to rush off and find one anywhere I can just be patient, here, and I'll eventually get that blonde buffalo handle 240 here it sounds like?

I just purchased a Kitiyama 8k. I have always used the King 6k which is soft and buttery, totally comfortable with it. My new Kitiyama 8k feels harder and seems to load up quickly. Have I not broke it in properly? Am I doing something wrong?
