Re: Honing Rods: CKTG vs. Idahone for G3 steel

Not overkill at all. I would say a combination stone is a better investment that either a strop or a rod, because you can “strop”(edge trailing, light pressure, finishing strokes) your knife on the fine side of the stone and achieve the same (actually much better) results, as well as being able to t...

Re: WTB CCK 1912 small stainless cleaver

Mark just created a clone with Fook Kee of the 1303 (1912 was incorrect, sorry!) in carbon with the original stamping, no weirdo QR code, and a significantly better (imo) handle, and there was some talk of him working on another model in VG-10. Check out the “improving this cleaver” thread.

Re: Typographical errors on the site.

Hey Mark, I was just doing some research on Honsuki’s, and noticed that in the description of the Okeya Blue #2 Wa Honesuki 150mm, it states “The Aogami inner core (hagane) is then covered with a layer of softer stainless steel to protect and add strength.” But in the video Steve mentions that it is...

Re: Knife Stand

Looks awesome Mark. I especially like character of the walnut version. I would say some silicone or rubber pads on the “feet” to keep it secure on a stone or steel countertop, and would caution against magnets, as I feel that if they provided any significant hold at all than they would make it neces...

Vintage Takayuki? Any info? Value?

Just saw this apparently vintage 300mm Takayuki pop up on my local CL (for $90) and was wondering if anyone could shed some wisdom. I couldn’t find anything similar with some google sleuthing, but I’m not an expert sleuther. I’m assuming it’s stainless because of the lack of patina, but any ideas wh...

Re: Show us your new knife!

Slowly getting back into the knife game, and I seem to be on a bit of a copper kick lately so I jumped on the copper damascus nakiri that Jeff (Black Lotus) posted as soon as I saw it. The cladding is copper & 1084 with a 52100 core, and the handle is Tasmanian blackwood with a carbon fiber spa...

Just to add to my turmoil Mark; is there an update or ETA on the Fook Kee in VG10?

Re: Wok suggestions?

Has anyone tried out the Babish 14” wok on Amazon? https://a.co/d/3vpl0AB It seems like it checks many boxes from the discussion here: 14” with a 6” flat bottom Medium-heavy (item description is 7.8lbs, but guessing that is fully packaged) Good angle on the handle, which is removable Metal helper ha...

For anyone dealing with inflammatory type chronic illnesses and/or food intolerances the Sweet Laurel “Sweet”(mostly baking) and “Savory” cookbooks are awesome. I’ve really been enjoying Alison Roman’s “Nothing Fancy” for easy but super tasty meals for company recently. A fantastic read if your into...

Chromax or SLD

Hello CKTG hive-mind! I am hemming and hawing over perfecting my first order. It will include; -Either the Chopper King W2 cleaver or small slicer (height or length? I think I’ll be happy with either) -a Tojiro hairline Nakiri -a Higo SK4 Hiho folder -a paddle strop with some 1um paste And the quest...

Very cool. I hadn’t come across this one yet, probably because it’s OOS. You should throw a review up on the main site Miles. I’m often suspicious of knives without any reviews!

Re: Third stone- Ms. Fine

Any of those stones are nice pre-polishers for a final strop of 1 micron paste. Most stainless knives I will finish at ~2k ( most won't support finer edges ) and carbons at ~8k. Of those you have listed, I like the Kitayama 8k best followed by the Arashiyama 6k as these provide excellent feedback a...

Re: Improving this cleaver.

I’m excited for the small slicer, but would also love to see another solid and maybe more modestly priced, and maybe quality stainless offering in the Wat Pro/ Toyama/ TF/ Takeda XL Nakiri dimensions. I’m also curious about the “tall Bunka” that Mark mentioned on the previously linked thread where p...

Third stone- Ms. Fine

Hello CK2G hive mind! I am curious to know what people’s thoughts are on a perfect third stone- Ms. Fine. I currently have a Shapton Pros in 320 and 1000 that I have been using for 6 months to maintain my knives, and any other knives that I can get my hands on to sharpen. With these, and some newspa...
