Re: Sharpening HAP40
I have the Morihei 9k with natural stone powder added and I love it!! Gives a great polish as well as an added bite to your edge. You will love it! The 4k isn't bad either.

Re: Sharpening HAP40
I sharpen my HAP40 blades on either Naniwa diamond stones or SG, Nubatama and Morihei Hishiboshi 9k, which has natural stone powder added to it, giving you an extra toothy bite along with a great polish. This is some very interesting reading but I generally just fall in line behind taz575, even buyi...

Re: Improving this cleaver.
I have engraved over etched period. Engraving gives it that olde days feel and look. I hate the lacquer, bolster and handle, I'm always willing to pay more for better quality steel. Also, I never saw an Artifex cleaver, she looks gorgeous. Wish I could buy one now. I'll be looking for this knife whe...

Re: A little TLC for a Cheapie 8 inch beater
I was going to suggest that the best plan was to chuck it in the bucket, buy a Chopper King and call it a day!! I had bought the White #2 small slicer https://www.chefknivestogo.com/chkiw2smsl.html and had yet to use it when i began a nice steak tip salad and decided to give her a twirl. She had gre...

Re: Best way of storing knives long term.
Is seems that vacuum sealing will protect them perfectly after wrapping them so they don't cut the plastic. without any air no erosion of any kind will occur and can stay that way a very long time. Sounds like you have a total new life adventure coming up and I wish you and your family all the best!

Re: Edge trailing vs Edge leading
I'd like to add my own welcome to our new member Stapelfeld. Everything is about personal preference within the technical boundaries of what you're trying to accomplish. Some use edge leading strokes, some trailing. Different angles for some, 19,12,15 and higher for some stainless steels. Once you g...

Re: Strops & Compounds advice
...I have a blue #2 240mm gyuto that I stropped on 3 occasions during a 9 month period of use as a home cook... That above is my biggest obstacle in learning freehand sharpening....unless I go cut a concrete curb there's just not enough knives for me to sharpen because my knives don't require much ...

Re: Takamura Chromax 150mm Petty - Why don't these exist?
Almost all of the cladding is going to be a soft stainless and scratch easily. Chromax is basically A2 tool steel, and it's readily available, so it wouldn't be too difficult to have a custom maker make something up for you in a mono steel blade! I love the blondish brown handles he used to put on ...

I'm also waiting for someone to speak up. Is this a knock off of vg-10 because I don't like vg-10.

Re: What’s the best Bunka for me?
I love SRK8 steel, bought the bunka the first day Mark initially posted this blacksmith and use it weekly. She holds an edge for a long time and cuts fantastic. This knife made Bunkas my favorite style of blade. Can't go wrong with this purchase!! You can do many different types of cutting styles, v...

Re: New knife to keep things exciting...a nikiri?
After going thru about a bunch of nakiris, i recommend the Kohetsu SLD above for sure, but if you want more exciting i would recommend a Kiri cleaver. It has a tip (you aren't going to dice an onion that well with a nakiri due to no tip), a curve in front so you can do some rocking, and it can scoo...
