Re: Konosuke Updates
Finally it is sold! Loved at last. Could not hold out any longer. When my wife asks me if I was crazy, I will tell her it was crazy to not buy it and point her to this thread. I trust y’all have my back on this one. Of course we'll have your back. I'd say it goes without saying, but since I just sa...

And still it sits there, unwanted, unloved. It is to cry. Really, doesn't anyone want a Konosuke SKD Tsuchime Gyuto 240mm Ebony Scratch for the low, low price of $400?

Excellent photo of the stack Ronnie! Today was my annual hankering for pancakes too! I like cakes thin and cooked in butter with blueberries in the batter, the warmth brings out the flavor. I eat an easy egg on each cake, one at a time with Grade A Vermont Maple Syrup. https://i.imgur.com/O7kz258.j...

Does anyone here use those https://shop.kingarthurbaking.com/items/standard-dough-rising-bucket, dough rising buckets that have the measurements on the side? Re: What did you cook today?
Raw cashews are so misnamed. Cashews contain urushiol, which is poisonous. To remove it the cashews are roasted in the shell with either steam in a big tumbler or boiled in oil. Then they are shelled, thoroughly dried, and peeled. For cashews, raw has come to mean not roasted a 2nd time once they ar...

Re: What did you cook today?
A few weeks ago, at the start of my current pizza-baking journey, I would have been pretty happy with tonight's result. But you learn things and once you do, it's hard to go back. This was an experiment that I can clearly see now was doomed to fail. I had a few dough remnants in the fridge and deci...

Re: Baking Much?
Here's some late night sourdough bread. This one is 40% local wheat flour and 60% AP. I used a little less starter (due to the superfood wheat flour) and a little more water. I preheated a pan of water in the oven this time to see if it would improve the spring. I don't think it added anything. Ove...
