Re: New Sujihiki
Hello I. There are small differences in these two knives and I've sharpened each one many times. Here is a compare and contrast list so you can decide. Steel: Kanehide PS-60 uses superior steel. It's not as big of a concern if you know how to sharpen. Mono steel knives are better when flexing them f...

Re: 2025 in Japanese knives
Hi T. We’ve been caught in a cycle where demand growth consistently outpaces supply. This dynamic puts pressure on small blacksmiths while benefiting larger companies that can produce knives at scale. Meanwhile, Japan is grappling with inflation—something the country hasn’t seen in nearly a generati...

How to dry CKTG Black Felt Knife Guard?
I have a customer who made a mistake and slid their new knife into the black felt guard, which was wet and trapped water in the guard. Do you foks have any ideas on how to dry it out? I would open up the guard with a chopstick to get some airflow. Maybe put in front of a sunny window or blow drying ...

Re: Are these blems on a new cuttingboard ok?
Hi Nick,
Did you purchase this board from us? I can’t find the order but I do see a couple of knife orders in the past.
If we did sell it to you, I’ll help you get a replacement board. It looks like wood glue came out and it was not sanded afterward to clean it up.

Re: New knife for my wife.
Hi W.R. Thanks for your question. Ok, for gifts I always recommend stainless steel and usually western handles. For some height I recommend nakiris and santokus and sometimes tall petty knives. That said, here are a few choices in the entry-level knife that is smaller in size with some interesting c...

New knife for my wife.
Hi, I'm looking at this knife: Item #: MVBLUE-TallNakiri as a gift for my wife. Do you have any similar knives in stock? Specifically, looking for similar size, and all stainless or rust-resistant steel. Does not need Damascus look, though I bet she would like this. I like a handle with a partial-ta...
