I've seen people use a Q-tip or a small patch of a microfiber dust pad to help in the detection of a burr. You can feel the burr catch on the fibers.

I like to use the knife for a little while just to see how it performs from the maker before I give it a fresh edge. New knives often have very rough looking edges on them, but they still cut reasonably well.

My favorite is the ribeye. I treat it with Montreal seasoning and cook it to medium-rare in a cast iron skillet on the stove top.

I think the others have covered it here. If you don't have a sharp edge at your coarsest grit then you probably won't get a sharp edge at the end of your progression. I primarily sharpen on a Wicked Edge setup and use diamond abrasives. The edge I get from a 100 grit diamond plate will slice paper.

Bark River knives seem to get a lot of love. I would check them out if I were in the market for a hunting blade. Benchmades are great knives, so I think you'll be happy with your choice.
