I haven't used this exact knife, but Honesukis like these aren't true single bevel knives, and like you have observed they don't have a concave Ura(back) like traditional Japanese knives. I think a 2k stone is very useful to have. For many knives I like to stop here.

Lately I've been trying out a 2k-8k(Kitayama) progression on some white steel knives and I really enjoy these edges if I don't overdo it with the 8k.

If the knife in question is the one I think it is(160mm FH), then it isn't really a single bevel knife. It comes with a fairly wide apex bevel on the right side as well as a smaller apex bevel on the back. I would follow Lepus' advice on how to sharpen it. In addition, if you lay it flat on the back...

Where I live the farmed salmon from the northern regions is excellent quality. At least I can't taste the difference between farmed and wild.
The majority gets exported to Japan and France.

Good tomatoes are hard to find sadly..

Room temperature stacked fatty bacon for me. When the edge just separates the pieces and they hardly move...love it!

Most things are really fun with a sharp knife though.

I especially like the way you describe and differentiate blade road finish and edge quality in your reviews(and you do it well).
This is very useful and yet very often missing from Jnat descriptions.
