What is everyone's opinion of Watanabe Knives, particularly the Nakiri or the petty in the Professional series, but I'd like to hear about others if that's all you have experience with

I think his nakiri is one of the best out there. I sold mine only due too not using the type much. Heartily recommended.

Everything in the Watanabe Professional series is highly touted, you're not going to go wrong with that line.
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

I have tried a few of his knives and really liked them, but for some reason, ownership has evaded me. At some point, if he still makes them, I would love to get one of his honyaki. As a side note, he has always been pretty responsive to email as well and his stone knowledge/collection is phenomenal.
