ohishi gyuto 180mm, suji 270mm - SOLD!
I have 2 ohishi for sale.
1. AS western stainless clad hammered 180mm gyuto. Traded for here , barely used, Just didn’t click with it . $150 shipped
2. Ginsan western suji 270. This is a really nice blade. Purchased new from Bernal recently , added on an edro saya. Barely used, sharpened once! $200 shipped . With no flex, not ideal for what I need it for.
Would trade for suji 270 with some flex

This is an awfully good deal Brett. Ginsan suji with Saya plus an AS 180 gyuto for $325? Surprised they’re still hanging around.

$115 for the gyuto (would make an excellent wife or travel knife)

Interested but could not find much information out there on this maker. Specifically how are the grinds/profiles/weight combos on a scale of let's say lasers on one end and work horses on the other?

Hi,
They sell these at coutelier Nola , epic edge, and epic edge. I’m not exactly sure who produces these specifically but i can speak on the grind and performance.
They are both ground with mid bevels , the suji is a middle weight , both knives lay somewhere in the middle of the “laser to workhorse” scale you mentioned. Both feature good fit and finish and very decently thin edges. Both would be easy to make even thinner (play with on the stones)
