Kanehide PS60 210mm gyuto

Hey all! Long time no see. No promises, but since I find myself with a bit of time on my hands, I think I may try to stop in a little more frequently. What better place to start than with the opportunity I just invented to do another knife review?

That is SUPER tempting, very much in line with what I was looking for, but I was hoping to find a less custom offering that I'd worry less about.

There are a lot of great Bunkas in the value range $80-$130 (there used to be a version of the Kanehide that ran $120-130, but for some reason can't find it anymore, maybe sold out). GLWS, I think that's a great deal, I hope someone picks this up.

Excellent review! I am sure your mom is more than happy haha. Made me think about picking up that custom blue handled PS69 Bunka as well...just not quite sold on the color combination.

Nice review. Seems like a great knife as a German substitute.

I would agree with the caveat.
Looks do matter, and a western handle (with a stainless blade) can go a long way to east someone's way in. But it can also be misleading.
Oftentimes my hand is inclined to glide and guillotine; with my western beater there's nothing easier, but with any of my Jknives, I just find the fine edges digging into the wood. Doesn't feel pleasant.
