Could anyone tell me what (if any) downsides there would be to getting the thermopop (which doesn't fold up and is a bit cheaper) instead of the thermapen?

The Thermapen is a great tool and seem to last forever. I bought one several years back and also picked up one of the MK4's and this is a great sale if you don't have one. I bought the leather holder for both of mine and even though it's a little expensive add on I like to have them in an enclosure to keep them from getting knocked around.

Does it read as fast as their other units? If so, as long as you a have an open (shirt) pocket for carrying it around, I can't see the any significant downside. I have a thermapop and my friends', where I cook a lot (pre-covid) have the thermapen. The thermapen is faster and more accurate. The company actually has a good write up here:https://help.thermoworks.com/knowledge- ... thermopop/. Among other things the thermapen is truly waterproof and the pop "splash proof."
Still in my experience the thermopop is fast, as accurate as I need it to be for what I do, and I haven't had problems with water. Use it almost daily and I've had it for 4 or 5 years.
