I'm no expert here and only have only fairly recently acquired a couple of natural stones. I also have the Atoma twin set (140 / 400) that Mark talks about, so I use the 400grit to get any heavy work sorted out & then to finish / refine I use a synthetic stone that is one or two grit sizes coarser. I then leave the synthetic stone "seeded" just to see how that affects sharpening for the synthetic the next time I use it.
