try heating some white vinegar and soaking a knife into it. it created a dark patina on my moritaka and after a cuts to take the black out later off, it never rusted again.

VCI paper has an expiry, usually needs to be replaced every two years.
Also, if storing, renaissance wax is excellent in addition to VCI paper.
Then I also use keep quite a few silica gel moisture absorbers in with the knives.
