Yeah, that would make sense that it was a joke .salemj wrote: ↑Sat Dec 05, 2020 10:47 amHaha. I assumed this was one of two jokes, in that most Japanese knives are designed for specific uses, and in that Japanese cuisine is not bread heavy.

Takeda AS
I have not been this excited about a knife in years. Always looked at these, but never pulled the trigger and they are seldom in stock in AS.

Re: Show us your new knife!
I was really drawn to that as well when I saw it come in, looks amazing.
Sure you're going to love it but eager to hear how it cuts.
Congratulations.

That seems like such a dream cleaver - though very none-classic
How much does it weigh?
And, how do you store it, if you don't mind my asking?

@Altadan, this one clocks in at 210 on edge, 109 height and 329 grams.
I usually just leave my cleavers out in a saya on my cutting board. I dont have a sheath for this one yet, so now it is on a mag rack. Hope to have a saya made for it soon.

Re: Show us your new knife!
Okay, one more, this one from Mert Tansu. I actually got this knife a few months back and loved it, but the handle was way too big for me. To get the handle to something more my size I had to remove about 2mm from the top and bottom of the machi and while I was at it added a finger notch. In the process, I scratched the blade face and had to re-polish. During the handle install, I dropped it and knocked about 3mm off the tip....it has been a journey, but is now complete. Still have not decided whether I want to etch the core, but for right now I am happy letting it sing as is until the new year:

My second Konosuke just arrived today, 240mm GS+ Togatta, feels very comfortable in hand, perfect balance at the heel with the ebony handle.
Side by side comparison with my best performer Kono hd2 270mm

Well done on the handle conversion.
I have a hole where a Mert needs to go...but it extends to my wallet so have to sell some paintings or knives first.
Great buy!
Aloha.

Re: Show us your new knife!
Been meaning to try one of these out. Doesn't disappoint. Really does feel like an oversized nakiri as apposed to an undersized cleaver. The grind is really special. Reminiscent of a well done Takeda. Thin, thin behind the edge, with some shoulders and a bit of a hollow behind. Cuts super nice. Took on a core patina pretty quick, otherwise almost no other color on the cladding.
Seems like a keeper.

New addition to my Nakiri/Cleaver family.
New from Kurosaki is this Kurosaki Juhyo Cleaver/Large Nakiri 180mm Aogami Super, Stainless Cladding
Comes in just under 9oz and cuts like a dream!

Re: Show us your new knife!
Two new knives came in the mail yesterday:
Matsubara Kiri Cleaver 190mm
- African Blackwood, Red Box Elder Burl, Grey Maple Burl
Okeya Ko-Deba 105mm 50/50
- Green Maple Burl, African Blackwood, Blue Maple Burl
Both knives came from CKTG, and both were rehandled by RealSharpKnife. Very pleased with both of these fun, out of the ordinary knives. The bevel on the Matsubara is quite uneven, but it's nothing some time on the stones won't take care of.
