Cutting board question
Looking for a new cutting board. Is Acacia a good choice? I have a new Moritaka nakiri that I don’t want to damage. Thanks!

I have a couple Acacia end grain cutting boards that I really like. Some people, however, think that they are too hard and are likely to dull your knives more quickly. I have not had that problem, but I am just a home cook and I probably do not use my cutting boards as much as someone who does that for a living.
Maple and walnut, particularly and green versions, are always popular and are generally regarded as a good species of wood for cutting boards. Cherry, also, but it is somewhat softer and is more likely to take some damage from heavy use, I believe.
Probably would be a good idea to stay away from bamboo, and glass or ceramic surfaces are the worst.

Just bought the soft rubber Hasegawa and I love it! It's like cutting on a cloud, easy on the blades and cleans up fast and thorough. I bought the scraper/scrub brush to make sure there's no food buildup. That's a nice little tool. Very happy with this product, nothing negative to say!
