From the tea world, that would be "fish eyes," full boil with big bubbles.
Barely boiling w smallest bubbles; "shrimp eyes."
A little further along but not full boil; "crab eyes."

Never heard “roiling” before. Makes sense once I looked it up, but it’s definitely not what most people say.

My understanding is that "roiling" is the much older term that gave way to "rolling" used almost exclusively now.
If God wanted me to be a vegetarian he wouldn't have made animals taste so good.

I don't recall ever seeing "roiling".

I wouldn’t be surprised if this is a color/colour situation... I say rolling.

I'm from Massachusetts and have never heard "roiling."

I am from the Boston area. My parents grew up in the city proper. I heard roiling sometimes as a kid. But it's been a long time since I heard the word or used it. Now i just say rolling.

Roiling boil for some reason just sounds wrong in how it roll of the tongue
