That depends. Chopping herbs takes a different knife than chopping chicken bones. What will you be using your knife for?

Are there any good books that teach Japanese knife techniques vs the more western style?

Videos will be better, books can easily lose hand position translation.

It took me too long to figure out that longer is better for rocking. I'm an old dog I guess.
240 gyuto with some belly (ie a high tip). Other than that it depends on the answers to the questionnaire above.
The pig is a magical animal. It takes vegetables and turns them into bacon.

With this you're looking for a rocking knife, not a chopping knife they are two different and distinct actions when cooking.

i use a cck cleaver for it. it's cheap and good

Good recommendation but it looks like the OP is looking for a rocking action which your CCK most decidedly is not.

I like my cck also for veggies for push chopping however is has a gentle slope on its edge and can do just fine for rock chopping also. For herbs I like a more curved blade like the daovua kiri cleaver.
