Bread knife
Bread knife
Any bread knife recommendations, hard and soft crust? It seems the Tojiro ITK Bread Knife 270mm has a lot of good reviews...?

Re: Bread knife
I have had a Mac Superior bread knife (https://www.chefknivestogo.com/macsubrkn.html) for many years. It is a fantastic all-around bread/cake knife. This past summer, I thought I would try the $22 Tojiro (https://www.chefknivestogo.com/tobrkn.html)
My August 6, 2020 review in the product page is copied here:
"This knife hits far above it's weight class. I wanted something that had more pronounced serrations compared to my Mac Pro bread knife. This does the trick. I bought two so I could keep one for me and give the other to my mother. This is a great solo bread knife or paired with a higher-end one with scalloped serrations. I think many people would be delighted with only this one. If you are thinking at all then you are over-thinking it. Click it, find a blade guard of the proper length if you need one, and click "buy." Simple!"
If I could only have one, I'd get the $22. I am fortunate that I can have both. Some products are more suited to the traditional serrations or scalloped serrations. I never thought I would justify TWO bread knives but, welcome to the year of the improbable (aka, 2020)!
Perhaps grab the 270mm Tojiro you mentioned and the $22 one I linked here? I assure you it would be an excellent pair and you would want for nothing.
Best Regards,
Mike

Re: Bread knife
It's my #1 for bread, too. I also bought a Güde Alpha Barrel Oak Series 12" Bread Knife, which I almost never use. The blade stock is so thick (3.5mm at the heel, 2.8mm at the tip) that making thinner cuts with it is difficult. It'll easily saw through a hearthy, thick-crusted loaf but once you're past those primal cuts, especially on more delicate loaves, its range of usability tails off significantly. Love my Tojiro, though.

Re: Bread knife
I own the more expensive Tojiro and like it fine. But I have to say I've given two people the $20 version and they love it. I haven't actually compared the two side by side, but given the prices, you might as well by both. Haha.

Comments: I'm short, a home cook, prefer lighter, thinner blades, and own mostly Konosukes but have used over a dozen brands.

If I wasn’t planning on making my own, this would be very very tempting.mauichef wrote: ↑Mon Nov 16, 2020 3:39 pm Here you go...... this looks really nice.

I have never seen that one before. Interesting. Might have to jump on that one as well.mauichef wrote: ↑Mon Nov 16, 2020 3:39 pm Here you go...... this looks really nice.

I have used the Tojiro ITK and it works well enough. I feel like it cuts larger, or feels bigger than 270mm. Truth be told, I actually prefer my Shun for bread.

Re: Bread knife
I have liked the ITK well enough but it is starting to dull and it does not do thick crusts well.Kalaeb wrote: ↑Tue Nov 17, 2020 3:30 pmI have never seen that one before. Interesting. Re: Bread knife
I might get judged for this but...
I use a 10” Mercer Millenia at work
I don’t understand the use for curved serrations on a bread knife, but I’m not a pastry chef. Maybe has something to do with crumbs.
The Millenia has pointed serrations, and not a lot, which is good. I’ve had it for little over a year and it still works great. Only $25ish on Amazon
