After a bunch of research and looking at recommendations (thanks to everyone on this forum) I think I finally decided on my first Gyuto which is the Harukaze AS Morado 210mm

I beleive this is a rebranded knife made by Hokiyama (TOSA cutlery)
Toda-ichi (“traditional series”) shadow tsuchime black finish 151431 210mm Gyuto

It is a 'factory-made knife' handmade in a factory with each process done by a different specialist responsible for a different step of the process (to be expected at this price point).
I know there are several rebrands including Harukaze, Haruyuki, Tosa-ichi etc. (with differences in the handles and also available in a nashiji finish)
Anyway looking for any final thoughts before I put my order in. Need to finish up the research on stones etc (so far I think I am going with a cerax 1k/3k)

I think this is a fantastic value and looks like a great knife. I also think you’re spot on for the combo stone. You’ve done your research well.

Not sure if you ended up ordering yet but my friend ordered his first gyuto an Anryu 210 and it is exceptional highly recommend.
