Im looking into getting new stones. the issue I'm having is I'm putting a lot of money into some stones but after a few months the stone becomes incredibly uneven and hard to get a nice precise edge on my knife. I want to know what the best affordable stones are and how to keep them from bowing in the middle. budget is $60 per stone. wanting from 300, 1k, 3k, 5k, 10k. thank you

Sounds like you need to get a flattening stone to flatten your present stones.
