Selling to make room for more knives
I used these for work in a prep kitchen. The 10” chef has been sharpened multiple times, thinned twice, and the logo has been polished off with 1000 grit sandpaper to remove scratches after thinning. Has been my daily driver on and off for 3 years now, as well as the pairing. Im going to miss them, but I feel confident in my knife care practices to upgrade to handmade, carbon knives for work.
Big Chef Knife 245mmx57mmx3mm $175
Little Chef Knife 200mmx60mmx3mm $150
Santoku 178mmx 60mmx2.3mm $150
Pairing 85mmx20mmx1.8mm& $90
These have a robust and confident feel. Not much stands in the way of these blades. My favorite attribute of these knives is the distal taper from choil to tip as well as from choil to end of handle. Positions the weight perfectly for a pinch grip.
Zwilling markets the steel for this blade is “FC61 stainless”, suppose to be Sandvik 13C27, fine-grained stainless steel.
